Semi-hard cheeses

Cheeses like colby, monterey jack, and mild cheddar vacuum seal well. Their slightly higher moisture content means the storage extension is somewhat less dramatic than hard cheeses, but still significant. Expect two to three weeks in a standard container versus four to six weeks vacuum sealed.


Soft and fresh cheeses

Soft cheeses like brie, camembert, and fresh mozzarella are more challenging to vacuum seal. Their high moisture content and delicate texture mean that the vacuum can compress or damage them.
